לדוגמה: בשר נא, דגים, צדפות, מוצרי חלב, עוף..
מזונות בעלי סיכון בינוני:
עלולים להכיל מיקרואורגניזמים פתוגנים אך בדרך כלל לא מצליחים להתפתח עקב מאפייני המזון.
לדוגמה:
חלב מפוסטר, גלידה, חמאת בוטנים, ממתקים מבוססים על חלב, בשר מעובד / משומר, ירקות, פירות, מיץ תפוזים….
מזונות בעלי סיכון נמוך:
כי לא סביר שיוכלו להכיל מיקרואורגניזמים פתוגנים ובדרך כלל לא תומך בצמיחתם עקב מאפייני המזון.

דגנים, דגני בוקר, לחם, משקאות מוגזים, אלכוהול, שומנים ושמנים, סוכר, מלח

נמוך ל PH= 4.6
מתחת ל 0.9= AW
טמפ' מתחת ל 5 מעלות צלזיוס או מעל 60 מעלות צלזיוס.
